Single estate
One slope, one lot, fully traceable.
Ceylon cinnamon is a different plant from the cassia sold as "cinnamon" almost everywhere else. Its bark is thin and brittle, curling into fragile quills that shatter cleanly. The flavour is delicate — citrus and honey rather than fire — and it carries a fraction of the coumarin found in cassia, which makes it the kinder choice for daily use.
We buy directly from peeling families in Matale, where the craft is passed down and a good peeler is worth their weight. Every lot is graded by quill diameter; this is our C5 Special.

Ingredients: 100% Ceylon cinnamon (Cinnamomum verum). Nothing else — no anti-caking agents, no fillers.
Store the quills whole in a sealed jar, away from light and heat, and grind as you need them — the aromatics fade fast once milled. A single quill will perfume a pot of rice, a curry, or a night's mulled wine.
Best within 18 months of the harvest date printed on your seal. Not irradiated; keep dry.
The ritual
Getting the most from a quill.
Fresh, always
Snap a quill and grind only what you need — the oils fade within minutes of milling.
In fat or heat
Toast in ghee or oil for thirty seconds to open the aromatics before the other spices go in.
Low and slow
A whole quill in rice, dhal or mulled wine gives a rounder, sweeter heat than powder ever will.
Sealed & dark
Keep the rest whole in the jar, out of the light. Good for eighteen months from harvest.
Matale · peeled by handThe making
Peeled thin,
cured fast.
Within hours of cutting, the outer bark is scraped and the inner bark rolled — the narrower the quill, the higher the grade. It's slow, exacting work that no machine has managed to replace.
What reaches you is a single peeler's single day, kept whole so you taste it at its best.

Reflections
What buyers say

“Beautiful quills, delicate flavour. Shipping to Yerevan took a little longer than expected but arrived perfectly sealed.”
“Subscribed after the first jar. The subscribe-and-save price makes it a no-brainer for how often we go through it.”
