Ceylon cinnamon is a different plant from the cassia sold as "cinnamon" almost everywhere else. Its bark is thin and brittle, curling into fragile quills that shatter cleanly. The flavour is delicate — citrus and honey rather than fire — and it carries a fraction of the coumarin found in cassia, which makes it the kinder choice for daily use.

We buy directly from peeling families in Matale, where the craft is passed down and a good peeler is worth their weight. Every lot is graded by quill diameter; this is our C5 Special.

Store the quills whole in a sealed jar, away from light and heat, and grind as you need them — the aromatics fade fast once milled. A single quill will perfume a pot of rice, a curry, or a night's mulled wine.

Best within 18 months of the harvest date printed on your seal. Not irradiated; keep dry.

Most "cinnamon" is cassia — a related but coarser bark that's high in coumarin. This is true Ceylon cinnamon (Cinnamomum verum): thinner, sweeter, more floral, and far lower in coumarin, which makes it gentler for everyday use.
Whole quills keep their aromatics far longer — we recommend them if you can grind at home. Choose ground if you want convenience; we mill it fresh to order and seal it immediately.
